Recipe: Chicken Curry Over Rice

(Cookbook Resources) - For a hearty winter meal, try Chicken Curry Over Rice. Mix all the ingredients in a slow cooker, cook for 3 to 4 hours and the entrée is ready to be served.

Chicken Curry Over Rice Ingredients 3 boneless, skinless chicken breast halves, cut into thin strips
˝ cup chicken broth
1 (10 ounce) can cream of chicken soup
1 onion, coarsely chopped
1 sweet red bell pepper, julienned
Ľ cup golden raisins
1 ˝ teaspoons curry powder
Ľ teaspoon ground ginger 1. Cut chicken into thin strips.
2. In a 5 to 6-quart (6 L) slow cooker sprayed with vegetable cooking spray, combine chicken strips, broth, soup, onion, bell pepper, raisins, curry powder and ginger and mix well.
