Chili Sauce 20 pounds tomatoes 12 hot peppers 2 stalks celery 3 pounds onions ˝ teaspoon nutmeg 1 teaspoon cinnamon 2 tablespoons mixed-spices 1 ˝ cups vinegar Peel tomatoes, add ground peppers, onions and celery. Add the rest of the ingredients. Add salt and sugar to taste. Tie mixed spices in cheesecloth. Cook for 3 hours. Mix occasionally to prevent scorching. Remove mixed-spices.
