The following recipe of the week, reprinted with permission from Catholic Relief Services, is an Indian dish, "Dal Soup." Quick Fact: 1 billion people live in India. India is known for growing rice, wheat, tea, cotton, and sugarcane. Catholic Relief Services has been working in India since 1946. CRS helps parents make sure that their children are able to go to school and get enough nutritious food to eat. Helpful Hints: Takes about ˝ hour. "Dal Soup" Serves 4 Ingredients for Dal Soup: • 1 cup red lentils • 1 cup water • 1 small, chopped onion • 2 cups of cold water • 2 teaspoons cumin • 1 teaspoon curry • 2 chopped garlic cloves • 1 teaspoon salt • vegetable oil How to make Dal Soup: 1) Boil the lentils in one cup of water. 2) Add the onion to the lentils and simmer for about 20 minutes, or until the lentils are soft. 3) Then, stir the lentils so that the water and lentils mix together well. 4) Add 2 cups of cold water to the mixture. 5) In a separate pan, sauté the cumin, curry, garlic and salt in vegetable oil. 6) Once the garlic is soft, add the mixture to the lentils. 7) Stir the soup with a whisk and then add salt and pepper to taste. 8) Serve very hot with rice. Mealtime blessing: "We thank you, Lord, for your gifts of food, family and this day."
